Preheat oven to 200 degrees C
Line and grease a small baking loaf pan of around 7 by 4 inch size
Sift the flour, salt, baking powder and baking soda
Mash banana and keep ready. I used very ripe banana, so they added maximum sweetness.
In a bowl add coconut oil, beat it with a wire whisk, if its liquidy, then keep in refridgerator for few minutes.
Add brown sugar and banana puree to beaten coconut oil
Let the mixture be combined than add flour and milk alternating in 2 portions
Do not use whisk, mix the batter with a steel spoon
Once mixed add chia seeds and incorporate
Pour in the pan and spread evenly
Put in the oven and bake for 20 minutes or until skewer inserted in the centre comes out clean
Cool for 5 minutes in pan. Tilt the pan and cool the bread on a wire rack
Serve for breakfast or any time of the day. Very good option to provide protein to fussy eating kids. Can be packed in lunch boxes with jam or nut butter
